Happy Memorial Day
We finally have some summery warm weather here, which is perfect for this long weekend! I decided to make some fruity ice cream stars for my sisters and I to enjoy outdoors at our Memorial Day picnic. Of course, my food crazed cat bro Bert just had to photo bomb my photo. He was determined to get into the yogurt! Bad cat!
The ingredients are simple – blueberries, strawberries and plain fat free or low fat yogurt. I also am using a star mold, but you can use any shape you like. I start by blending the blueberries with some of the yogurt. Of course, that pesty cat was still trying to get into my ingredients! I find it best to just ignore his antics.
Next I put a layer of blueberries into my mold and freeze it for a bit. I then add a layer of plain yogurt. I found it easiest to smooth it all over in the mold using my tongue.
The third layer is then the strawberries blended with some yogurt. I smooth that mixture on top of the plain yogurt. You need to be careful not to use much pressure or you might blend the layers. As you can see by my smile, I am pretty proud of my work so far.
Once they are frozen, about an hour in the freezer, pop them out of the star mold and serve on a festive platter. They are supposed to be red, white, and blue, but they look more purple, white, and pink.
Wondering how they taste…we seem to have had no problem licking out our patriotic bowls!

Mom says they are a bit bland for her taste, she likes a bit more sugar or just plain fruit without sugar, but we love them.

We should have known you’d be whipping up something good for your Memorial Day picnic, Emma! I quickly threw together some banana/peanut butter yogurt treats today, but they weren’t fancy like the ones you just made. I might try those for 4th of July for sure!
