Pumpkin cookies sound tasty, don’t they? I love pumpkin and was wondering what I could bake using my can of pumpkin. I came up with some pumpkin cookies with a whole cornucopia of flavor! These cookies will be great for desert, but if you are looking for something more for a main meal, try my all in one meal recipe from last year!
As always, I gather up all my ingredients before I start baking. You will need a cookie cutter for this recipe. I chose my turkey since Thanksgiving is coming up, but you can use any shape you would like.
First up, you need to combine all the ingredients in a bowl and mix them up well. For starters, I used a pastry blender to help mash in the banana, then I decided to use my paws as the dough is rather heavy for a spoon. Yes, I did make sure I washed my paws first. Be careful and add in the coconut flour slowly as it can dry out your dough quickly if you have too much.
Dump out the dough onto a flour covered surface. Sniff it to make sure it smells alright. I love the aroma of all the pumpkin, coconut, and banana – a real cornucopia of flavor in this dough! Caution: Cats appear to like pumpkin, so make sure your sneaky cat keeps his mitts out of your dough!
It’s time to either roll out the dough, or stamp it out with your paws. Once it is the desired thickness, use your cookie cutter to cut out the cookies.
Keep on cutting them out until your parchment paper covered baking sheet is full. These turkeys might need some room to spread their wings in the oven, so I took a close look before deciding they were ready to bake.
These guys are ready to be popped into my oven. The aroma wafting through the house will be incredible and probably wake up everyone from their naps!
Remember my warning about the pesty cat? Well, I was lazy and did not clean up the kitchen right away, and guess what happened? Yep! That darn cat bro Bert got his dirty paws onto the counter and was eating the rest of my dough. Cats have no shame, I tell you! Bad cat!
My cookies came out of the oven and they look great! Since I don’t decorate them, the turkey shape is not all that evident, but I know they are turkeys! Now to wait for them to cool off so I can taste them!
Just so you know, I lead a tough life. It is not easy being forced to wait to eat the delicacies I bake, but my mom says I have to wait. They are real flavorful. I’m glad the cat didn’t get his paws into my stuff until I was finished baking.

p.s. mom has some cookie cutters for making canopes (I like cantelopes better). They work great for cat treats and to use up small pieces of dough.
I am not going to bake cat treats, are you crazy? Cats can do their own baking, but that cutter canope thingy might be good for training sized treats! My sisters would be in my furs if they didn’t have each other to hang out with. They do their stuff, I do mine.
I might check those cookies out. I would have to freeze most of them tho cuz S & D tend to have reactions to even small amounts of pumpkin.
That is a bummer. I love pumpkin, but Mom rations it out to me and to my sisters.
